Hire camping gear and get up into the Andes. Peru has some of the best hiking tracks in the region (see photo below taken near Huaraz)

The border crossings to Bolivia and Ecuador are almost as much fun as being in each country. Be sure to have your sense of humour at the ready as border guards entertain you in the wee hours of the night
